A handaan bowl with plenty of cream
This party-bowl formula is a proposed estimate and hasn't been kitchen-tested. Cup conversions assume 240 ml and tablespoons assume 15 ml; dry spoon measures are rough. For timing, allow about 25 minutes of active work plus 4 hours of chilling, extending the chill if the middle is loose.
Ingredients
- 720 ml water (3 cups), reserving 180 ml cold for the gelatin
- 10 g plain powdered gelatin (about 1 tablespoon; use a scale)
- 9 g plain instant coffee (about 1 1/2 tablespoons)
- 38 g sugar (about 3 tablespoons)
- 360 ml all-purpose cream (1 1/2 cups)
- 180 ml condensed milk (3/4 cup)
Method
- Scatter gelatin over the reserved cool water. Allow it to swell according to the label while you dissolve the coffee and sugar in the remaining hot water.
- Take the hot coffee off the heat. Stir in the softened gelatin until the mixture is smooth, then pour carefully into shallow food-safe dishes.
- Let the strong steam clear and refrigerate. Wait until the slab holds through the center; the planned chill is about 4 hours, not a deadline.
- Cut into generous spoon-size cubes. In a separate cold bowl, stir the cream and condensed milk until they form an even sauce.
- Fold the coffee cubes into the sauce with a broad spoon. Cover, keep cold, and portion into small bowls as people are ready for dessert.
What makes a coffee jelly recipe Pinoy?
What makes it Pinoy is the sweet, creamy sauce. A Filipino bowl stirs dark coffee cubes through pale cream, instead of serving a whole jelly alone. All-purpose cream and condensed milk do the work, so you don't whip or bake anything. It's a chilled dessert you portion with a serving spoon.
There's room for household preference within that style. Some cooks like more sauce, while others want the coffee cubes to lead. A handaan or noche buena table doesn't need every bowl to follow one rigid formula. Start with a balanced batch, then let your own serving plan decide how rich the finish should be.

Coffee jelly recipe Tagalog: paano gawin?
Takpan at panatilihing malamig hanggang ihain. Kung gulaman ang gamit, sundin ang paraan at dami ng tubig sa pakete nito, dahil iba ito sa gelatin.
How do I fit it into a handaan?
Plan fridge space before you plan a bigger batch. A dessert that needs chilling competes with drinks, sauces, and other dishes. You'll find several shallow covered trays easier to arrange than a deep, heavy pot. They also give you a chance to check the set before adding the cream.
Use a smaller serving bowl and refill it from the fridge as needed. The full batch doesn't have to sit on the table throughout the meal. Put a clean serving spoon with the bowl and avoid passing used eating spoons into it. This keeps portioning neat and makes cold storage easier.
The yield here is estimated by sharing the batch among eight modest bowls. It's not a claim about how much every guest will eat. If there are other desserts, smaller shares may suit the meal. If you need individual cups, the cup and bottle guide explains how to measure the actual fill.
Can I add sago or use gulaman?
Cooked sago can add another texture, but prepare it separately by its own packet method. Cool it before combining, and drain off loose cooking water. Pouring that water into the bowl thins the cream and makes it harder to judge the final amount. Start with a small portion to see if you like the mix.
For gulaman, replace the entire jelly method with the one on its label. Keep coffee as part of the stated liquid allowance. Gulaman may give a firmer bite than this gelatin version, which some people prefer in a mixed bowl. Read the ingredient choices before buying powder for a large occasion.
| Style | What to change |
|---|---|
| Creamy shared bowl | Keep the listed sauce and fold gently |
| More coffee in each spoon | Offer some sauce separately |
| Individual dessert cups | Measure one portion before filling the rest |
| Milk drink with jelly | Use the separate drink formula |
What if the cream tastes too sweet?
Taste the cream mixture before adding all of it to the cubes. You don't have to add all the sauce. Hold some back, or stir in more plain cream to reduce its sweetness per spoonful. Adding water is less useful because it also takes away the body. Change a small spoonful first to avoid wasting the whole bowl.
For a quieter finish, try Japanese-style jelly with cream on top. For an everyday smaller batch, return to the basic Filipino-style dessert. These are different serving choices, not rules about which version is more authentic.
How do I keep the party batch cold?
Refrigerate it covered and bring out only what will be served soon. Keep cream packs chilled after opening according to their labels. A busy kitchen can make it easy to forget a bowl beside the stove, so finish one stage and put it away before starting another.
There's no verified shelf life for this recipe. A conservative plan is to prepare it close to the occasion and finish the portions while their storage is known. If you can't keep the dessert cold during travel, change the transport plan before making it. Don't use freezing as a way to turn it into a long-life product.

Questions about Pinoy coffee jelly
Kailangan ba ng condensed milk?
Hindi naman. Nagbibigay ito ng tamis at lapot sa sauce. Kung papalitan, tikman muna ang cream mixture bago isama ang cubes para madaling ayusin ang lasa.
Can I use the whole cream pack?
Measure what the recipe needs rather than assuming a pack equals a cup. Save the rest according to the label or adjust the sauce in a separate bowl.
Should the cubes be very large?
Keep them comfortable to eat from a dessert spoon. Big cubes show the color well, but pieces that need cutting in the serving bowl are awkward.
Can I double the ingredients?
Scaling the amounts is a starting calculation, but setting time won't simply double. Use suitable shallow trays and verify the middle of each one before mixing.
Does the dessert need fruit?
No. Coffee cubes, cream, and condensed milk are enough for this version. Adding other ingredients changes the balance and the storage needs.
Is coffee jelly high in calories?
It depends on how much cream and condensed milk you fold in. You can estimate the coffee jelly calories for your bowl from the ingredient labels.
